This November, we invite you to try a seasonal recipe that’s sure to delight: Meatballs with Rice in Cardamom Soup. Inspired by Middle Eastern spices, this dish celebrates the British autumn harvest, featuring high-quality Japonica rice from the EU.
These tender meatballs, made with ground beef and Japonica rice, are seasoned with a harmonious blend of spices and herbs. The cardamom-infused soup, blended with spinach, delivers a smooth, warming base that’s ideal for colder evenings.
Recipe Details: Meatballs with Rice in Cardamom Soup
Ingredients (yields 30 pieces):
- 200g Japonica rice
- 1kg ground beef
- 50g fresh coriander, chopped
- 150g finely chopped red onion
- Salt and pepper, to taste
- 1/2 tsp ground cumin
- 2 eggs
- 50g olive oil
- 30g breadcrumbs
- 400g fresh cardamom pods, crushed
- 1kg fresh spinach, washed and chopped
- Juice from three lemons
- 200g plain flour
- 200g chopped green onions
- Yogurt, for serving
Steps:
- In a large mixing bowl, combine the ground beef, Japonica rice, red onion, eggs, breadcrumbs, cumin, coriander, salt, and pepper. Shape into small meatballs.
- Boil a pot of water, add the meatballs, and let simmer for 25 minutes. Reserve the broth.
- In a separate pot, heat olive oil and sauté the cardamom, spinach, flour, and green onions until aromatic.
- Gradually add the reserved broth, blend until smooth, then add the meatballs.
- Serve in deep bowls with a spoonful of yogurt on top.
